Summer sausage is any sausage that can be kept without refrigeration. Summer sausage is usually a mixture of pork and other meat such as beef or venison. Summer sausage can be dried or smoked, and while curing ingredients vary significantly, curing salt is almost always used. Seasonings may include mustard seeds, black pepper, garlic salt, or sugar. We feel we have created a perfect summer sausage recipe. Which is the same as our BUFF sticks. Bison, Sea Salt, Maple Syrup, Celery extract and natural wood smoke and that's it!!
Summer sausage, like many sausages, uses leftover scrap meat and organ meat that would otherwise be wasted. However some brands of summer sausage do not use scrap meats. We are one of those. Only our premium trim meat us used.
Traditionally, summer sausage is a fermented sausage with a low pH to slow bacterial growth and give a longer shelf life, causing a tangy taste. Keeping with tradition and in an effort to give the most authentic and mouth watering flavor we stuck with the tried and true method.
Creating an all natural, locally processed product is not as hard as people think. Using the best possible ingredients and the best possible producers can only result in the best possible product. the fact that we are not willing to compromise on quality is where other companies waiver and become like the rest.
